A wholesome vegan experience with 7-course degustation dinner



Redefining the ingredients of the Persian cuisine is a daunting task on its own. Coupled with making it wholly vegan but packing the flavors of Persia is a challenge that not many can master. It certainly is a treat to have a vegan take to Persian cuisine, but it was made to reality when Shabestan worked with LivingveggiebyAnia hosted a seven-course vegan degustation dinner exclusively for pre-booking guests.


"Every single dish looked like a small piece of art , Hamid Hosseini with an artistic precision combined Persian tradition with the plant based movement. Ash Reshteh , Mirza Ghasemi (always my personal favourite) Yetimche , Eggplant Bruschetta, Vegetable Shashlik Khoresh-E-Fesenjan (veggie shashlik in pomegranate and walnut sauce), Soya Lubia Polo and for sweet finale Sholeh zard - rice pudding with rose water and saffron. What was the event all about?

It’s not every day that you can indulge in vegan delicacies with a twist. But at Shabestan, we love to experiment and have a different take on regular Persian dishes. Converting traditional Persian dishes in a vegan style is undoubtedly a more significant challenge. But it’s easier said than done as it was an indeed a mountainous challenge to curate such dishes. Hence our in-house chef Hamid Hosseini, using is Middle-eastern culinary experience curated some of the most exquisite Persian vegan dishes. Though it took time and effort in curating dishes, the event was a grand success because when dishes like Ash Reshteh, Mirza Ghasemi, Dishes such as Yetimche, Eggplant Bruschetta, Vegetable Shashlik Khoresh-E-Fesenjan and so much more was offered as part of the meal, you can expect the event to be a flavorful event. It was indeed a culinary marvel to experience a burst of Persian flavors but with vegan ingredients in preparing the food.
